With a background in analytical chemistry, I can tell you the more honest version. Chemicals facilitate, but mechanics resolve. Good chemistry can soften, wet out, loosen, and destabilize residue. It still does not reach out, wipe a cabinet face, lift a film off a backsplash, or remove the mass from a surface.

Kitchen grease stops behaving like simple grease

Fresh oil is one thing. Old kitchen buildup is another. Once oils have been heated, cooled, oxidized, and repeatedly exposed to air and cooking residue, they stop behaving like fresh grease and start behaving more like a bonded film.

That is where polymerization becomes part of the problem. The residue thickens, hardens, and starts acting more like a varnish than a wipeable spill. Add dust, smoke residue, starches, proteins, and airborne particulates, and the surface becomes chemically messy and mechanically stubborn.

Where saponification helps and where it falls short

Saponification is real. Strong alkaline chemistry can react with fats and oils and help convert part of that residue into something easier to remove. That is one reason caustic degreasers can be effective in the right setting.

But homeowners and even cleaners sometimes overestimate what that means. Saponification is not magic, and it is not a substitute for labor. Even sodium hydroxide can miss the mark once kitchen buildup has aged, polymerized, carbonized, or physically bonded into the surface texture.

The reason kitchen surfaces are not buried under a foot of grease is not because a spray solved the chore. It is because someone physically removed the material. They wiped it, scraped it, rinsed it, agitated it, and moved it off the surface.

That is the part people forget. Chemistry can open the door. Hard work is what carries the residue out of the room. Mechanical removal is what makes any kitchen habitable in all reality.
